recipe corner
i have fought it for too long. i have a confession to make. something that i haven’t shared with you. i LOVE to cook. in fact, cooking is my first love when it comes to creating. and boy can i throw down in the kitchen!!! you might think i am just bragging, but seriously folks, i know my way around a kitchen. and if you have ever been to my house for dinner, you already know this about me. and for a while now i have thought about posting my recipes here on this blog. for some reason i thought that it didn’t go with art. but i am kind of sick of compartmentalizing myself. so i am going to share my passion for food here as a weekly post called recipe corner. i know there are some of my friends who will be ecstatic about me posting recipes again. i used to have a cooking blog that has been highly neglected ever since i started my art business. instead of continuing to post on that blog, i will be posting recipes here now.
a little background… i have tons of food allergies at the moment, wheat, eggs, dairy, and yeast to name a few. but i don’t let that stop me from creating fabulous meals that my whole family will enjoy. in fact, i think you would hardly miss those things in my recipes. i make an effort to use as many fruits and veggies in my recipes. and you will rarely find any processed foods in my recipes. my goal is to use as many whole fresh foods as possible. i try to shop at the farmer’s market. i buy organic meats. most of the recipes are made with seasonal foods. it has really been a no brainer for me ever since i started experiencing health problems. i have learned how to cook healthy meals that taste AMAZING! flavor doesn’t have to compromise your health.
another thing you need to know about my recipes… i cook everything to taste. just how it is. if you think it needs more salt, add more salt. my measurements are not exact, so feel free to change it to whatever you think it needs. cooking is all about love and taste to me. if you need to change it so that it tastes amazing, then do it. i will NOT be offended. that is how i learned how to cook. all the best cooks just use a recipe as inspiration, then go from there. but if you do follow my recipes to the T, they will still be delicious.
so that is my cooking style and here is my first recipe:
peach corn salsa
2 peaches chopped
2 ears of corn
1 cup finely chopped red onion
1/2 cup finely chopped cilantro
2 tomatoes chopped
2 green chilies
2 habanero peppers finely chopped
juice of 2 limes
salt and pepper to taste
boil corn on the cob for around five mintues, remove from the water and place on grill until browned on all sides. cool corn and cut off the cob. place green chilies under hot broiler and turn until blackened on all sides. remove from the oven to cool and remove skin when cool. cut green chilies into small chunks. place corn and green chilies in a big bowl and add the rest of the ingredients. serve over maui maui or chicken breast, in tacos or with chips. great summer recipe!!! makes a lot so be ready to eat up.
Looks yummy Wendy! I’m going to start trying your recipes since 1. I KNOW they will be delicious and 2. they are healthy. Joel and I are both trying to eat more healthy 🙂
