sunday soup club
i read an article in a cooking light magazine a few years back about a soup club. the soup club got together every so often to make soup and socialize. kind of like a book club, only with soup. the idea must have made an impression on me because all these years later i am starting my own very own soup club. here is how it will work…
once a month, we will meet at my house. each member will be assigned an ingredient to bring and we will get together and make soup. why soup? because soup is inexpensive and oh so comforting. i love soup and i love sharing my love of cooking with other people. i once taught a girlfriend to cook. i love the bonds that form over preparing a meal together and then sitting down to dine.
i LOVE the idea of a soup club and i figured you might too. you just might want to start your very own soup club, or book club or game night club or whatever club. i will let you know how it goes.
sweet potato carrot soup
2 cups of peeled and chopped carrots
3 sweet potatoes peeled, cubed
1 apple peeled and chopped
1 onion chopped
1 quart of vegetable broth
3 Tablespoons of apple cider vinegar
cook carrots, onion, sweet potato, and apple in a pot until softened. place veggies into blender and blend with a few splashes of vegetable broth until smooth. add veggies back to pot with the rest of the vegetable broth and cider vinegar. bring to a simmer. add salt, pepper and cinnamon to taste. garnish with some goat cheese.
